Description

Peanut butter brownies aka chocolaty peanut butter goodness! Little secret though? They are healthy, low-sugar and gluten-free.

Ingredients

  • 1 can (15 Oz. Size) White Northern Beans
  • 5 Tablespoons Grapeseed Oil
  • 3 whole Eggs (sub Flax Eggs To Make Vegan)
  • 2 Tablespoons PB2 (Powdered Peanut Butter)
  • ½ cups Cocoa Powder
  • ¼ cups Sugar
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • ¼ cups Mini Chocolate Chips
  • ¼ cups Peanut Butter Chips (creamy Peanut Butter If Vegan)

Preparation

Preheat oven to 350 F.

Drain beans and wash them with water in a strainer. In a food processor add the drained beans, grapeseed oil, eggs, powdered peanut butter, cocoa powder, sugar, baking soda and baking powder. Blend until everything is smooth.

Pour into a greased 8×8 pan. I grease mine with grapeseed oil. Bake for 30-35 minutes. Remove from oven and set pan on a rack to cool.

Into a microwave safe bowl add both the mini chocolate chips and peanut butter chips. Microwave on high for 1 minute. Take it out of the microwave and stir until smooth.

Smooth peanut butter/chocolate on top of brownies.

I love cakes and making cakes, but I am trying to be good at the moment. I wanted a treat for my husband’s lunch box. Not sure where/if I went wrong…. but these were horrid, inedible. They went in the bin straight away. Might be a case of over-healthifying something that just can’t be made convincingly without the calories.
