Description

I saw a lot of chocolate cookies with Rolos but I think that peanut butter cookie dough is the ticket! By the way, I am using the peanut butter cookie recipe from the Jif container. It’s a good one; I only changed a few things! As always.

Ingredients

  • 1-¾ cup All-purpose Flour
  • 1 teaspoon Salt
  • ¾ teaspoons Baking Soda
  • ¾ cups Peanut Butter
  • ½ cups Butter, At Room Temperature
  • 1 cup Light Brown Sugar
  • 3 Tablespoons Milk
  • 1 teaspoon Vanilla
  • 1 whole Egg
  • 30 pieces Rolo Caramel Chocolates
  • 1 cup Turbinado/raw Sugar

Preparation

Preheat your oven to 375 degree F. Line a baking sheet with Silpat or parchment paper. Set aside.

In a bowl combine the flour, salt and baking soda. Set aside.

In your mixer, cream the peanut butter and butter. Add the brown sugar, milk and vanilla. Blend well, add the egg and blend some more. Carefully add the dry ingredients and beat until just blended.

Using a medium size scoop, form your cookies and place a Rolo in the center of each one. Gently wrap the Rolo in the cookie dough and roll in the turbinado sugar (if using). You could also sprinkle the turbinado sugar on top of all the cookies before putting them in the oven.

Cook in the preheated oven for 11-12 minutes. Let the cookies cool in the pan for 3-4 minutes before removing.

Great recipe! I don’t use jif, so I would have never found this on my own. Really good recipe for peanut butter cookies. Turned out great even though I forgot the egg!!

I made these over the weekend for friends who came over to my apartment. The cookie coop I used wasn’t big enough to wrap the dough around the rolo, so I just planted a rolo in the center of each cookie and sprinkled colorful sugar on top. Still turned out delicious!
