Description

Light and fluffy cookie made with everyone’s favorite cookie: Oreos!

Ingredients

  • 1 cup Butter, At Room Temperature
  • 3 ounces, weight Mascarpone Cheese
  • 1 cup Sugar
  • 1 whole Egg Yolk
  • 1 teaspoon Vanilla
  • 2-½ cups Flour
  • 7 whole Oreo Cookies

Preparation

Preheat oven to 325ºF.

With an electric mixer, use the paddle attachment to cream together butter and mascarpone cheese. Add sugar to bowl, mix until fluffy.

Add egg yolk and vanilla. Slowly add flour to batter.

Crush Oreos in a bowl and add them to batter. Mix until just incorporated.

Scoop out 1-tablespoon scoops of dough and place on a greased cookie sheet. Bake for 12-15 minutes.

Serve!

I was looking for a way to use some leftover Mascarpone cheese and came across this recipe. My whole family enjoyed it! It has a taste of shortbread somewhat which we found to be pleasing especially because they do not involve the extra work to get shortbread. We will certainly make these again!
