Description

A new take on the old classic, all dressed up for the holidays.

Ingredients

  • 1-½ cup Raisins (or Craisins)
  • 1 cup Orange Juice
  • 1 cup Butter, Room Temperature
  • 1-½ cup Sugar
  • 2 whole Eggs
  • ¼ cups Grated Orange Peel
  • 1 teaspoon Cinnamon
  • ½ teaspoons Cloves
  • 2-½ cups All-purpose Flour
  • 2 teaspoons Baking Soda
  • 1 teaspoon Salt
  • 3 cups Old Fashioned Rolled Oats
  • 16 ounces, weight White Chocolate Baking Chips
  • 2 teaspoons Vegetable Oil

Preparation

• Combine orange juice and raisins (or Craisins); let stand overnight.
• Cream butter and sugar together.
• Beat in eggs, orange peel and spices until light and fluffy.
• Combine flour, baking soda, and salt; stir into butter mixture.
• Add raisins, any soaking liquid, and oats; mix well.
• Drop by rounded tablespoonfuls onto greased cookie sheets.
• Bake at 350 degrees for 10-12 minutes.
• Cool completely.
• In a small, deep bowl, melt the white chocolate and oil. (Put in the microwave for 2-3 minutes on LOW power, stirring once. If it needs longer, microwave in 1-minute intervals, stirring well between each one.)
• Dip one-third of the cooled cookie into the white chocolate.
• Chill on waxed paper-lined cookie sheets until white chocolate is firm.
• Makes about 3 dozen, depending on how many people have been snitching from the cookie dough bowl.
