Description

Every part of these cookies is citrusy and refreshing.

Ingredients

  • FOR THE COOKIES:
  • 1-½ cup Brown Sugar
  • 1 cup Butter Or Margarine
  • 2  Eggs
  • 1 Tablespoon Grated Orange Peel
  • 1 teaspoon Vanilla
  • 3 cups Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • ¾ cups Buttermilk
  • FOR THE FROSTING:
  • 1 Tablespoon Grated Orange Peel
  • 3 Tablespoons Orange Juice
  • 2 Tablespoons Butter Or Margarine
  • 3 cups Powdered Sugar

Preparation

For the cookies:
Preheat oven to 350ºF.

In the bowl of a mixer, cream together brown sugar and butter. Add eggs one at a time and mix well after each addition. Add grated orange peel and vanilla and mix well.

In a separate bowl, sift together flour, baking powder, baking soda and salt. Alternately add flour mixture and buttermilk to the sugar mixture, starting and ending with flour mixture. Mix well after each addition.

Drop by tablespoonfuls onto an ungreased cookie sheets, leaving approximately 2 inches between each cookie. Bake 12-14 minutes or until edges are set and the cookies are golden. Cool completely on cooling racks before frosting.

For the frosting:
Add grated orange peel, orange juice, butter, and powdered sugar to a large bowl. Mix well and spread onto cookies. The frosting will set in approximately 1 hour.
