Description

A citrus twist on the oatmeal cookie. Recipe is easy to double (and easy to make in general)!

Ingredients

  • ½ cups Softened Butter
  • ¼ cups White Granulated Sugar
  • ½ cups Packed Brown Sugar
  • 1 whole Egg
  • 1 teaspoon Orange Extract
  • ½ teaspoons Vanilla Extract
  • 1 cup All-purpose Flour
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • ½ teaspoons Cinnamon
  • ½ cups Diced Fresh Cranberries (or Dried Cranberries)
  • 1 cup Quick Oats

Preparation

Cream together (using a mixer) your butter, white sugar, and brown sugar. Add in your egg, orange extract, and vanilla extract. Mix until well combined.

In a separate bowl, combine your dry ingredients. This includes the flour, baking soda, salt, and cinnamon.

Slowly add your dry mixture into your wet mixture (a little at a time), mixing as you add. Continue until fully combined.

Using a spatula, fold your diced cranberries and oats into your dough.

Form the dough into small balls and place them onto a greased baking sheet. Flatten each ball of dough slightly using a fork or the palm of your hand.

Bake at 375 degrees (Fahrenheit) for 8-10 minutes or until golden brown. Recipe will make approximately 24 cookies (serving size 2 cookies).

Great cookie. I added fresh orange jest and less extract. I also used dried cranberries. This is at least the fourth time I’ve made this recipe. Good job. I’ve also added white chocolate.
