Description

Light, airy Orange Cookies. Perfect with a cup of tea or a big glass of milk!

Ingredients

  • FOR COOKIES
  • ½ cups Butter, Unsalted, Room Temperature
  • ¾ cups Sugar
  • 1 whole Egg
  • ½ teaspoons Vanilla
  • 2 cups Flour
  • ½ teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ½ cups Milk, Room Temperature
  • 1 whole Small Orange Or 1/2 Large (the Zest And Juice; Divided Use)

  • FOR FROSTING:
  • 1 Tablespoon Melted Butter
  • Confectioners Sugar

Preparation

Preheat oven to 375.

In mixer with paddle attachment, cream butter and sugar until smooth. Add egg and vanilla.

In another small bowl whisk flour and baking soda and powder.

Zest orange and juice orange. Put aside 1 Tablespoon of juice and 1/2 teaspoon of zest for icing. You’ll use the rest in a second.

Add flour mixture and milk to sugar mixture alternating between the 2 as you add. Then add remaining zest and juice. Drop onto parchment lined cookie sheets by teaspoons. Bake for 8 -10 until edges are lightly browning. Transfer to cooling rack.

For Frosting:
In the meantime, mix 1 Tablespoon of melted butter, zest and orange juice that you put aside with confectioners sugar to make icing. You’ll just need enough confectioner’s sugar to get the frosting to the right consistency. So use your own judgement here. While cookies are still warm, lightly ice. Let cool completely.
