Description

Quick banana snack cake with a simple orange glaze.

Ingredients

  • ½ cups Unsalted Butter
  • 1 cup Granulated Sugar
  • 2 teaspoons Grated Orange Zest
  • 2 whole Eggs
  • 4 whole Bananas, Mashed
  • 2 cups All-purpose Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Baking Powder
  • ½ teaspoons Salt
  • 1 cup Bittersweet Chocolate Chips
  • Chopped Nuts (optional)
  • ⅓ cups Freshly Squeezed Orange Juice
  • 1-½ cup Powdered Sugar

Preparation

Preheat oven to 375 degrees and grease and flour a bundt pan.

In a large mixing bowl, cream butter and sugar. Add grated orange zest and continue creaming. Add eggs, one at a time, and mix thoroughly after each addition. Add mashed bananas and continue to mix well.

In a medium bowl, whisk together flour, soda, baking powder, and salt. Add flour mixture to wet ingredients in three doses, beating just until the dry ingredients are mixed in. Fold in chocolate chips and nuts, if desired.

Pour batter into prepared pan and bake in preheated oven until toothpick inserted into center of the cake comes out clean, about 40 to 45 minutes. Cool in pan on cooling rack for 5 minutes.

While cake cools, whisk together fresh orange juice and powdered sugar. Invert pan onto serving platter. Drizzle orange glaze over the warm cake. Serve warm or at room temperature.
