Description

Orange cupcakes with an almond kick!

Ingredients

  • 6 Tablespoons Butter, Softened, Plus 1/2 Cup For The Frosting
  • ¾ cups Sugar
  • 1 whole Egg
  • ¾ teaspoons Vanilla Extract
  • 1-¼ cup Flour
  • ¼ teaspoons Salt
  • 1-¼ teaspoon Baking Powder
  • ½ cups Milk, Plus 1 Tablespoon For The Frosting
  • ½ cups Orange Juice
  • 2 teaspoons Orange Zest, Divided
  • 4 cups Powdered Sugar
  • 1 teaspoon Almond Extract
  • ¼ cups Slivered Almonds

Preparation

For the cupcakes:

1. Cream 6 tablespoons butter and granulated sugar together.
2. Add in the egg and vanilla and mix until combined.
3. Add in the flour, salt, and baking powder; mix until combined.
4. Add in milk, orange juice, and half of the zest, until your kitchen smells of oranges and heaven.
5. Bake in a lined muffin pan at 350ºF for about 15 minutes.

Make the frosting:

1. Beat remaining 1/2 cup butter until fluffy.
2. Add in powdered sugar in 1/2 cup increments, beating at medium low speed.
3. Add the remaining 1 tablespoon milk, the remaining zest, and almond extract.
4. Beat 2-3 minutes more.
5. Frost cooled cupcakes and top with almonds.
