Description

The Jewish New Year, Rosh Hashana, is just around the corner and it’s time to make this easy delicious honey cake to wish everyone a happy and sweet new year! Easy to make, moist and full of flavor.

Ingredients

  • 1 cup Sugar
  • 3 cups Sifted Flour
  • 1-½ teaspoon Baking Powder
  • 1-½ teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1 teaspoon Allspice
  • 1 teaspoon Clove
  • 1 teaspoon Nutmeg
  • 1 cup Honey
  • ¾ cups Oil
  • 1 cup Strong Coffee, Cooled
  • 1 teaspoon Vanilla
  • 3 whole Eggs
  • ½ cups Raisins (optional)
  • ½ cups Walnuts (optional)

Preparation

Lightly butter 1 tube pan or 2-3 loaf pans, depending on their size. ( I use loaf pans – they’re great to wrap nicely and give as a gift.)

Preheat oven to 350F.

Sift all dry ingredients into a large bowl. Make a well and add all liquid ingredients. Mix together and add raisins and nuts, if using.

Bake at 350F for 45-60 minutes (less for the loaf pans). They’re done when a toothpick comes out clean.

I might make this but without the nuts – have you ever done this? I am allergic. I was thinking to replace with something else but really not sure what! Any suggestions? Thanks
