Easy to make and delicious molasses cookies made with apple and cinnamon.
Preheat the oven to 375 degrees F.
In a large bowl, cream the butter and brown sugar. Then add the molasses and the egg, and cream them together with the butter and brown sugar.
Sift together the flour, pumpkin pie spice, baking soda, cinnamon, and salt.
Add about 1/3 of the sifted dry ingredients to the creamed mixture at a time and continue to mix. Stir in the diced apples.
Put the granulated sugar in a small bowl.
Roll the dough into 1 inch balls.
Roll each of the dough balls in the granulated sugar and place on a lightly greased baking sheet.
Bake in a preheated oven for about 10 minutes.
