Description

Made with Cinco De Mayo in mind, this frozen treat can be served May 5, or anytime soon, as the temperature rises.

Ingredients

  • 2 cups Graham Cracker Crumbs
  • ¼ cups Sugar
  • 1 stick Melted Butter
  • 1 can Frozen Bacardi Margarita Mix (10 Oz. Can)
  • 1 can Sweetened Condensed Milk (14 Oz. Can)
  • 8 ounces, weight Cool Whip , Thawed
  • 1 whole Lime, Zested

Preparation

In a 9-10″ deep dish pie plate, add graham cracker crumbs and sugar. Pour melted butter over crumbs and mix well with a fork. Press crust mixture into the bottom and up the sides of a pie plate.

In a medium size bowl, add the frozen Bacardi Margarita mix and the sweetened condensed milk. Mix well and pour into graham cracker pie crust. Chill in the freezer until frozen or well set. Before serving , top with Cool Whip and lime zest. Serve frozen or just partially thawed.

The flavor was great, everybody liked it. I just wish it didn’t have to be frozen, but it has to be frozen because it does not set. If thawed it becomes runny again. I’m trying to figure out what I can do to make it set without having to freeze it. Loved it anyway.
