Description

A variation on chocolate oatmeal cookies uses chewy dried cherries for a bright flavor.

Ingredients

  • ½ cups Dried Cherries, Chopped
  • ½ cups Butter
  • ½ cups Brown Sugar
  • ½ cups Granulated Sugar
  • 1 whole Egg
  • ½ teaspoons Vanilla Extract
  • ½ cups Flour
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 1-½ cup Old Fashioned Oats
  • ½ cups Good Quality Chocolate Chips

Preparation

Preheat oven to 350ºF.

Roughly chop the dried cherries and reconstitute for about 5 or 10 minutes in some hot water (just enough to cover them). Drain well.

Beat softened butter and sugars together. Mix in egg, add vanilla.

Mix dry ingredients together (flour, baking soda and salt) then add them to the wet ingredients.

When the flour is incorporated, add the rolled oats. (Note: using old-fashioned oats will give the cookies a slight lacy texture. If you prefer them a little chewier and “together” you may prefer to use quick oats.) Stir in the drained cherries and chocolate chips.

Drop dough by heaping teaspoonfuls onto a lightly greased baking pan. Bake for about 10 minutes (watch carefully–do not overcook). Makes 24 cookies.

I’m thinking that next time I may add 1/2 cup of chopped blanched almonds. Or walnuts.

These spread out and were a lot thinner and crunchier than I expected. They were tasty when they came out of the oven all warm and gooey, wondering if they’ll be too hard once they’ve cooled?
