Description

Delicious cream cheese frosting sandwiched between two oatmeal cookies.

Ingredients

  • FOR THE COOKIES:
  • 1-½ cup Flour
  • 1-½ cup Old Fashioned Rolled Oats
  • ½ teaspoons Salt
  • ½ teaspoons Cinnamon
  • ½ teaspoons Baking Soda
  • ½ cups Butter, At Room Temperature
  • 1 cup Brown Sugar
  • 2 whole Eggs
  • FOR THE CREAM CHEESE FROSTING:
  • 8 ounces, weight Cream Cheese
  • ½ cups Butter
  • 2 teaspoons Vanilla
  • 5-½ cups Powdered Sugar

Preparation

For the oatmeal cookies:
Preheat oven to 350ºF and line a cookie sheet with parchment paper.

In a large bowl combine the flour, oats, salt, cinnamon and baking soda and set aside. In a medium bowl cream together the butter and brown sugar. Add the eggs one at a time until combine.

Add the wet mixture to the flour and mix until completely combined. Using a spoon, make rounded tablespoon-sized balls and place on the cookie sheet about 1 inch apart. Bake for 9-11 minutes until sides of cookie start to brown. Cool completely on a wire rack before applying cream cheese frosting between two cookies.

For the cream cheese frosting:
Let the cream cheese and butter sit at room temperature for at least 45 minutes. In a large mixing bowl beat the cream cheese, butter, and vanilla with an electric mixer on medium to high speed until fluffy. Gradually add powdered sugar until fully combined. Spread a healthy dose of frosting between your cookies and enjoy.
