Description

Oatmeal butterscotch cookies, slightly different but very yummy! I don’t like butterscotch at all but this is one of my favorite cookies.

Ingredients

  • 1-¼ cup All-purpose Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • ½ teaspoons Cinnamon
  • 1 cup Butter Flavor Vegetable Shortening
  • 1-¼ cup Granulated Sugar
  • 2 whole Eggs
  • 1-½ Tablespoon Grated Orange Peel (optional)
  • 2 Tablespoons Water
  • 3 cups Quick Or Old-fashioned Oats, Uncooked
  • 1-⅔ cup Butterscotch-flavored Chips

Preparation

Preheat oven to 375ºF.

To prepare as bars, grease a 15×10 inch jelly roll pan.

Combine flour, baking soda, salt, and cinnamon in a small bowl. Beat shortening, sugar, eggs, and orange peel (if using) in a large bowl until creamy. Gradually beat in flour mixture and water. Stir in oats and butterscotch chips.

Spread into prepared pan. Bake for 18-22 minutes or until golden brown. Cool completely in the pan on a wire rack. Cut into bars.

Notes:
This makes 48 bars, if prepared as above. These can also be made as drop cookies, with the baking time adjusted down for the smaller size. If making drop cookies, baking time should be 12-15 minutes, or until golden brown.

I don’t typically include the orange peel as I like the taste of these better without it.
