This refreshing chopped salad was so tasty, my girls and I were fighting over the last serving. If you’ve never had jicama, it’s a slightly sweet, mild flavored, very moist and very crunchy root vegetable from Mexico. It’s also very high in fiber and Vitamin C. I can buy precooked barley in the freezer section of my grocery store. If you can’t find the precooked variety, I share simple cooking instructions below.

Oatmeal Raisin Cookies

Recipe Description

Finally, after going through 20 oatmeal raisin recipes, I finally found one that tastes just like the restaurants!

Preparation Instructions

1. Preheat oven 350ºF. Mix flour, baking soda, baking powder and salt in a medium bowl.
2. Cream butter, sugar and brown sugar. Add eggs one at a time. Add vanilla.
3. Combine the dry mixture with the wet mixture. Stir in oats and raisins.
4. Drop by tablespoonfuls on a cookie sheet. Bake 11-13 minutes.

Ingredients

2 cups All-purpose Flour
1 teaspoon Baking Soda
1 teaspoon Baking Powder
1 teaspoon Kosher Salt
1 cup Butter, Room Temperature
1 cup Sugar
1 cup Dark Brown Sugar
2 whole Eggs
2 teaspoons Vanilla Extract
3 cups Old Fashioned Oats
1-½ cup Raisins

I made these yesterday but added dried cranberries instead of raisins because I had some that were really good and I wanted to use them. This cookie recipe is amazing! I will use it again and again. I may get crazy next time and add white chocolate or chocolate chips and raisins. It really doesn’t matter because this recipe is solid. Thanks for sharing.

I LOVE this recipe! This is the one I always use, too, and it is my husband’s favorite cookie. You get a ton, so I usually halve, but it is endlessly adaptable and takes to any add ins or spices I throw at it. A sure winner.

Wonderful! This was easy to make, even for a newbie like me. I split the recipe into 2/3 raisin, 1/3 chocolate chip. It made about 36 delicious cookies.

The best oatmeal raisin cookies I’ve ever made! Crispy edges with a soft center. Don’t be afraid that the dough might be a bit loose and look like it won’t hold together – it will.

Oatmeal Toffee Cookie Bars

One of my favorite candy bars is the Heath chocolate covered toffee bar. Heath makes a toffee chip for baking. They are very small and mix well for a well distributed flavor. I took one of my old oatmeal cookie bar recipes and tweaked it to include these chips and also some chocolate chips. They are tasty and crispy and even more so after fully cooling overnight. That is, if they last overnight!
