Description

Soft and chewy! The perfect sweetness of the raisins and spice of cinnamon.

Ingredients

  • ¾ cups Plus 2 Tablespoons Butter
  • ¾ cups Brown Sugar
  • ½ cups Granulated Sugar
  • 2 whole Eggs
  • 1 teaspoon Vanilla
  • 1-½ cup All-purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoons Salt
  • 3 cups Quick Oats
  • 1 cup Raisins

Preparation

Heat oven to 350ºF.

In a large bowl, beat the butter and sugars on medium speed with an electric mixer until creamy. Add in eggs and vanilla and beat well. Add the flour, baking soda, cinnamon and salt. Mix well. Stir in oats and raisins.

Drop dough by rounded tablespoonfuls onto a Silpat-lined cookie sheet.

Bake 8–10 minutes or until light golden brown. Cool for 1 minute on the cookie sheet, then remove and cool completly on a wire rack.

I typically do not care for oatmeal raisin cookies, but as they are my boyfriend’s favorite, I made a batch using your recipe. I must say, they are quite tasty and I have eaten several after vowing to not touch them at all.
