Description

Best coffee cake I have ever had with oatmeal, brown sugar, pears and raspberries.

Ingredients

  • FOR THE TOPPING:
  • 2 Tablespoons Cold Butter
  • 2 Tablespoons Rolled Oats
  • ¼ cups Brown Sugar
  • 2 Tablespoons Flour
  • _____
  • FOR THE CAKE:
  • ½ cups Rolled Oats
  • ¼ cups Warm Water
  • ¾ cups Unsalted Butter
  • ½ cups Brown Sugar
  • ¼ cups Plain Sugar
  • 2 whole Eggs
  • 1 teaspoon Vanilla
  • ¾ cups Flour
  • 1 teaspoon Baking Powder
  • 1 pinch Salt
  • 2 whole Pears
  • ¼ cups Raspberries

Preparation

Preheat oven to 350 degrees.

For the topping: mix the topping ingredients together by rubbing the butter with your fingers until clumps form, just like a crumble.

For the cake: place the oats in a bowl and cover with 1/4 cup warm water (which is just enough to moisten them), stir and leave to cool. Cream butter and sugars in a mixer. Add eggs. Mix well and add vanilla, continue mixing until incorporated. Sift flour, baking powder and salt over the mixture. Add the oats (if they are too runny, make sure to drain them). Fold together. Pour 2/3 of the mixture into a loaf pan. Cover with pears and raspberries, top with remaining batter and topping. Bake for 1 hour or until golden brown
