Description

Not your traditional cookie. They may look like asteroids, but these cookies are moist, chewy and caky and the flavor of cinnamon and peanut butter really pops out!

Ingredients

  • ¼ cups Peanut Butter, Smooth Or Crunchy
  • ⅓ cups Brown Sugar
  • 2 whole Egg Whites
  • ¼ cups Applesauce (unsweetened)
  • 1 teaspoon Vanilla Extract
  • ¾ cups Whole Wheat Flour
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 1 teaspoon Cinnamon
  • 1 cup Old Fashion Oats
  • 2 Tablespoons Mini Chocolate Chips

Preparation

Preheat oven to 350ºF. Line two baking sheets with parchment paper.

In a bowl, cream together peanut butter and brown sugar.

Add the egg whites, applesauce and vanilla. Beat together until smooth and creamy. Add flour, baking soda, salt and cinnamon and beat together until incorporated.

Stir in oats and fold in chocolate chips.

Place about 1 tablespoon of cookie batter onto the cookie sheet. Bake for 10–12 minutes, until bottom is lightly brown.

Makes 32 cookies.
