Description

Oatmeal bars with yummy peanut butter, and roasted peanuts with cream cheese baked in the middle!

Ingredients

  • FOR THE CRUST:
  • 2 cups All-purpose Flour
  • 2 cups Quick Cooking Oats
  • 1 cup Brown Sugar, Firmly Packed
  • ½ cups Chopped Roasted Peanuts
  • ¾ teaspoons Baking Soda
  • 1-¼ cup Butter, Room Temperature

  • FOR THE FILLING:
  • 8 ounces, weight Cream Cheese, At Room Temperature
  • ¾ cups Peanut Butter
  • ½ cups Sugar
  • 1 whole Large Egg
  • 2 cups Toffee Bits

  • FOR THE TOPPING:
  • ¾ cups Quick Cooking Oats
  • ¾ cups Brown Sugar, Firmly Packed
  • 2 Tablespoons All-purpose Flour
  • ½ cups Unsalted Butter, Cold

Preparation

Preheat oven to 350°F. Line a 13×9 inch pan with aluminum foil, and then spray with nonstick cooking spray.

In a large bowl combine flour, oats, brown sugar, roasted peanuts and baking soda. Mix and then add the butter. With a pastry blender or two knifes, cut the butter into the mixture until the mixture becomes crumbly.

Press into the greased pan. Bake for 20 minutes.

In the meantime, in a mixing bowl, cream together the cream cheese and peanut butter until combined. On medium speed add the sugar and egg. Mix until combined. Make sure to scrape down the sides and the bottom of the bowl.

Spread over prepared crust.

To make the topping, combine in a medium bowl the oats, brown sugar and flour. Cut in the cold butter until the mixture becomes crumbly. Evenly sprinkle over the creamed mixture.
Bake for 20–25 minutes. Let completely cool before cutting and serving.
