Description

A hearty and not-too-sweet oatmeal muffin paired with a delicious, rich Nutella frosting.

Ingredients

  • FOR THE MUFFIN:
  • ½ cups Old Fashioned Oats
  • ½ cups Buttermilk
  • ¼ cups (or A Little Less) Packed Brown Sugar
  • 3 Tablespoons Butter, Melted And Cooled
  • 3 teaspoons Egg Whites
  • 1 teaspoon Vanilla
  • ¼ cups Whole Wheat Flour
  • ¼ cups All-purpose Flour
  • 1 pinch Salt
  • ½ teaspoons Baking Powder
  • ¼ teaspoons Baking Soda
  • FOR THE FROSTING:
  • 2 Tablespoons Butter, Softened
  • ⅛ cups Powdered Sugar
  • ¼ cups Nutella, Plus A Little More For Good Measure

Preparation

Soak oats in the buttermilk until softened, about 30 minutes.

Combine brown sugar, melted butter, egg whites, and vanilla. Stir until just mixed. In another bowl, combine flours, salt, baking powder, and baking soda.

Once oats are soft, combine all three mixtures and stir until just mixed.

Divide into 6 greased muffin tins and bake for about 14 minutes at 375 degrees F, or until it passes the toothpick test.

Turn the muffins out of the pan and let cool on wire rack.

While muffins are cooling, beat together softened butter, powdered sugar, and Nutella, until a smooth frosting forms. Make sure the powdered sugar doesn’t overpower the taste of the Nutella – add extra Nutella if it does! Frost onto cooled muffins.

These are great! I doubled the recipe and got a nice dozen of cupcake size muffins. I had to more than double the frosting recipe, but maybe I just wanted more frosting than the original recipe calls for. Also, didn’t have buttermilk, so just used milk and lemon (1 cup milk + 1 tablespoon lemon). Pretty easy and delicious.
