Description

Buttery, crispy oatmeal lace cookies.

Ingredients

  • 1 cup Unsalted Butter
  • 1-½ cup Granulated Sugar
  • 2 whole Eggs
  • 2 teaspoons Vanilla Extract, Or Almond Extract
  • 6 Tablespoons Unbleached All-purpose Flour
  • 1 teaspoon Salt
  • 2 cups Quick Cooking Oatmeal

Preparation

Preheat oven to 350 degrees F.

Cream butter and sugar until light yellow and fluffy. Add eggs, vanilla and cream until well combined. Add flour, salt, and oatmeal and mix well. Drop by teaspoonfuls onto parchment-lined cookie sheets.

Bake 8-10 minutes until edges are golden brown, but not too dark. Let cool completely until edges are completely set. Using a thin spatula, lift cookies off the sheets.

Store in an airtight container or freeze.

Makes about 5 dozen cookies.

These are so easy to make (but I learned the hard way that you MUST have the parchment paper). They are DELICIOUS and addicting. I took them to work and shared them with men and women both and everyone LOVED them! I will be making these over and over!

I make a similar lace cookie each year for the holidays. I’m intrigued by the addition of oatmeal….hmm. Might have to try it this was just once and compare.
