Description

Think pumpkin pie, warm oatmeal, and slightly soft graham cracker, all rolled into one delectable cookie! No need to ask—grab that second one while it’s still warm!

Ingredients

  • ½ cups Finely Crushed Graham Cracker Crumbs
  • ¾ cups Butter, Softened
  • 2 cups Brown Sugar
  • 1 cup Sugar
  • 1 whole Egg
  • 2 cups Pumpkin
  • 4 cups Flour, White Or Whole Wheat
  • 2 cups Old Fashioned Oats
  • 2 teaspoons Baking Soda
  • 2 teaspoons Cinnamon
  • ¾ teaspoons Nutmeg
  • ⅜ teaspoons Cloves
  • 2 cups Chocolate Chips
  • 1 cup (Heaping) Very Coarsely Broken Graham Cracker Pieces

Preparation

Preheat oven to 350ºF.

Process graham crackers to make the crumbs. Set aside.

Combine butter, sugars, egg, and pumpkin; stir well. In a separate bowl, combine flour, oats, reserved graham cracker crumbs, baking soda, cinnamon, nutmeg, and cloves. Add to pumpkin mixture along with chocolate chips and graham cracker pieces. Fold together until thoroughly mixed, trying not to break many graham cracker pieces in the process.

Drop by heaping tablespoonfuls onto parchment paper-lined baking sheets. Bake for 14-20 minutes, or until puffed, golden orange, and firm. Transfer to a wire rack to cool completely.
