Description

Classic, crisp oatmeal cookie. I’m not sure where this recipe originated, but it was always an old clipping in my mom’s recipe box. If you like a crisp cookie, you will love these.

Ingredients

  • 1-¼ cup Shortening
  • 1 cup Sugar
  • 1 cup Brown Sugar
  • 2 whole Eggs
  • 1 teaspoon Vanilla Extract
  • 1-½ cup Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 3 cups Rolled Oats
  • 1 cup Nuts (optional)

Preparation

Preheat oven to 350 degrees.

Cream shortening, and gradually add 2 sugars. Beat in eggs. Add vanilla. In a separate bowl, whisk together flour, salt, and baking soda. Add dry ingredients to wet, blending well. Stir in oatmeal and nuts. Drop by spoonfuls onto an ungreased cookie sheet. Bake for 15-18 minutes.

These were soo good!! I used butter flavored crisco and these cookies had the perfect crunch!!

I make these often (last night and was about to add the recipe in fact). People eat them like crackers. They are quick and easy. The differences in my recipe: calls for the eggs to be beaten before added and the oats to be the instant kind. It also makes a large batch so great if you need to feed many people!
