Description

The oats and cranberries give these cookies a nice chewy texture and the white chocolate gives a nice vanilla flavor.

Ingredients

  • ⅔ cups Butter, Softened
  • ⅔ cups Brown Sugar
  • 2  Eggs (large)
  • 1-½ cup Old Fashioned Oats
  • 1-½ cup All-purpose Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • 5 ounces, weight Dried Cranberries
  • ⅔ cups White Chocolate Chips

Preparation

1. Preheat oven to 375 F.

2. Using an electric mixer, beat butter and sugar together in a medium-sized mixing bowl until light and fluffy. Add eggs and mix well. Set aside.

3. Combine oats, flour, baking soda and salt in a separate mixing bowl. Add this to the butter mixture in several additions, mixing well after each addition.

4. Stir in dried cranberries and white chocolate chips.

5. Drop the dough by rounded teaspoonfuls onto un-greased cookie sheets.

6. Bake for 10-12 minutes or until golden brown. Cool on a wire rack.

Yields: 55 cookies if using a small cookie scoop.

Very good! I used a mixture of dried cranberries and dried blueberries to equal the amount of dried fruit listed in the recipe. It worked out great. Definitely a keeper!
