Description

Soft and chewy oatmeal cookies that are easy and healthy!

Ingredients

  • 2-½ cups Old Fashioned Oats
  • 2 cups Flour
  • ½ cups Granulated Sugar
  • 1 cup Brown Sugar
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 cup Canola Oil
  • 2 whole Eggs
  • 2 teaspoons Vanilla Extract
  • 2 cups Semi-Sweet Chocolate Chips

Preparation

Preheat the oven to 350 F. Grease 2 baking sheets or line with a Silpat or parchment paper.

In a large mixing bowl or in the bowl of a stand mixer add the oats, flour, sugar, brown sugar, baking soda, salt, canola oil, eggs and vanilla and mix until combined. The dough will be crumbly. Mix in the chocolate chips.

Using your hands clump together a tablespoon of dough and place on prepared baking sheets at least an inch apart. The balls with be crumbly. This is OK, they will combine while baking. Repeat with remaining dough.

Bake for 10-12 minutes or until set and golden. Remove them from the oven and let them cool on the pan for five minutes.
