Hands-down my favorite cake, it’s the one I request every year for my birthday. It sounds a little bland (oatmeal cake? really?) but it is unbelievably rich and decadent. And it makes a really great “company’s coming” dessert—a little fancy but still cozy and homey. And the extra sauce (I’d even suggest making a double-batch—don’t want to run out!) is delicious on ice cream!
For the cake:
1. Combine oatmeal and boiling water. Allow to sit for 20 minutes, stirring occasionally.
2. In a separate bowl, cream the margarine, brown sugar, and sugar.
3. Beat in eggs.
4. In a separate bowl, combine flour, salt, baking soda, and cinnamon.
5. Alternately combine creamed and dry mixes with oatmeal.
6. Pour into a greased 9×13 cake pan and bake at 350 degrees for 35-40 minutes (until it has a puffy, crusty top). The cake will be short.
For the sauce:
1. In a heavy saucepan, bring the margarine, evaporated milk, and brown sugar to a boil.
2. Remove from heat and stir in vanilla.
Pour over slices of cake and enjoy. Store extra sauce in the fridge. Reheat in the microwave as needed. I like to make a double batch of the sauce because I’d hate to skimp on some poor guest’s opportunity for awesomeness. That, and I’m kind of a glutton for punishment.
