Description

Deliciously moist oatmeal cake with tasty coconut caramel like topping.

Ingredients

  • 1-½ cup Boiling Water
  • 1 cup Old Fashioned Oatmeal
  • 1 cup Sugar
  • 1 cup Brown Sugar
  • ½ cups Shortening
  • 2 whole Eggs
  • 1 teaspoon Vanilla
  • 2 teaspoons Cinnamon
  • 1-½ cup Flour
  • 1 teaspoon Baking Soda

  • FOR THE TOPPING:
  • 6 Tablespoons Milk
  • 6 Tablespoons Butter
  • 1 cup Brown Sugar
  • 1 cup Coconut

Preparation

Preheat oven to 350 degrees.

Mix together boiling water and oatmeal; allow to stand for 20 minutes.

Cream together sugar, brown sugar and shortening. Add eggs and mix in. Then add vanilla and cinnamon. Stir in oatmeal, then flour and baking soda.

Pour into a greased and floured 9×13 pan. Bake for 35 minutes. With a few minutes left, start preparing the topping.

Bring milk, butter and brown sugar to a boil. Boil for two minutes, add coconut, and stir in. Pour over the top of the cooked cake. Return to the oven and broil topping for about two minutes or until golden brown. Watch closely, as it does burn easily. Allow to cool and enjoy!
