Description

NY Cheesecake—tall, rich and dreamy. No, I’m not talking about a man, simply a dessert from the heavens.

Ingredients

  • FOR THE CRUST:
  • 1-½ cup Graham Cracker Crumbs
  • ¼ cups White Sugar
  • ¼ cups Butter, Melted
  • FOR THE FILLING:
  • 40 ounces, weight Cream Cheese, Room Temperature
  • 5 whole Eggs, Room Temperature
  • 2 whole Egg Yolks, Room Temperature
  • 1-¾ cup White Sugar
  • 2 Tablespoons Flour
  • ¼ cups Heavy Cream
  • 1 teaspoon Vanilla
  • 1 teaspoon Lemon Juice
  • 8 ounces, weight Strawberries, Sliced
  • Optional Topping: Nutella

Preparation

Preheat oven to 200 F.

Combine graham cracker crumbs with 1/4 cup sugar and melted butter. Grease a 10-inch spring form pan with cooking spray and then press mixture into the bottom to create the crust. Place crust in refrigerator while preparing batter.

In a large bowl using a mixer, beat cream cheese until smooth. Add eggs and egg yolks, one at a time, beating until just incorporated. Add the 1 3/4 cup sugar, flour and heavy cream. Beat until smooth. Add vanilla extract and lemon juice, beat until incorporated.

Fill a roasting pan with boiling water and place it on the lower oven shelf. Pour batter into the prepared crust. Put it into the oven on the upper rack and bake for 3 hours 20 minutes. Turn oven off and leave the door slightly open. Leave cheesecake in the turned off oven for 90 minutes. Then remove it from the oven and let cheesecake cool completely on the counter. Then refrigerate overnight.

Serve with fresh strawberries and Nutella.
