Description

A delicious homemade banana pudding using Nutter Butter cookies instead of vanilla wafers!

Ingredients

  • 3 cups Milk
  • 3 whole Eggs
  • ¾ cups Sugar
  • ⅓ cups Flour
  • 2 Tablespoons Butter
  • 2 teaspoons Vanilla
  • 4 whole Bananas
  • 1 pound Nutter Butter Cookies
  • 2 cups Sweetened Whipped Cream
  • Fresh Mint, For Garnish (optional)

Preparation

Combine the milk, eggs, sugar, and flour in a large microwaveable bowl. Cook on high, stirrring with a whisk every minute or so, for 5-10 minutes, depending on your microwave. The pudding is thick enough when a distinct trail is left in the mixture by a spoon pulled through it. Stir in the butter and vanilla, and chill in the refrigerator for about 2 hours, stirring occasionally.

Cut the bananas into 1/4 inch slices and break the cookies into thirds. Spoon half of the pudding mixture into a large bowl, or into seperate smaller bowls. Top with bananas and cookies. Spoon the remaining pudding mixture over the cookies and bananas and top with sweetened whipped cream. Cover and chill for 2-24 hours. You can garnish with additional cookies, bananas and fresh mint, if you like. This recipe makes about 8 servings.
