Description

This is not your ordinary Fruit Pizza – the blueberry glaze layer makes it delicious and unique! Betcha there won’t be any left!

Ingredients

  • FOR THE CRUST:
  • 1-½ cup Flour
  • ¼ cups Sugar
  • 1-½ stick Soft Butter
  • _____
  • FOR THE CREAM CHEESE:
  • 8 ounces, weight Softened Cream Cheese
  • ¼ cups Sugar
  • _____
  • FOR THE BLUEBERRY GLAZE:
  • 1-½ Tablespoon Cornstarch
  • ½ cups Sugar
  • ½ cups Water
  • 2 cups Fresh Or Still Frozen Blueberries
  • Various Fresh Fruit For Topping

Preparation

Mix flour, 1/4 cup sugar and 1 1/2 sticks butter until smooth. Press into pizza pan or onto a circle pizza stone. Bake 12 minutes at 350F. Cool, loosen cookie from stone with the back of a large bread knife. Set aside.

Next combine cream cheese and 1/4 cup sugar. Spread on cooled cookie.

In a saucepan, combine corn starch, 1/2 cup sugar and 1/2 cup water over medium heat. Cook, stirring until clear and thick. Remove from heat and cool before stirring in the 2 cups of fresh or frozen blueberries. Layer on top of cream cheese layer.

Decorate pizza with fruit of your choice. Dig in! There probably won’t be any left, but IF there is, it’s great day 2, but soggy day 3, so eat up!

(Sorry about my photo, I had nothing fresh on hand but pineapple, so I had to pull peaches and blackberries from my freezer, it may not be pretty, but it sure was yummy!)
