Here’s another delicious and easy-to-make vegan dessert recipe that requires no cooking at all. I use cranberry preserve for these crumb squares, but if you want to make them completely raw, you can make some raw chia jam.
Put desiccated coconut, oat flour, maple syrup, coconut oil and tahini into a blender or a food processor, and mix everything well.
Save 1 tablespoon of the mixture and transfer the rest into a container or a small tray covered with plastic wrap. Press the mixture down to form an even layer, and put it into the freezer for 15–20 minutes. Remove from freezer and spread jam over it.
Combine the reserved 1 tablespoon mixture with the rolled oats. Scatter over the jam and press down lightly.
Keep it in the fridge for a few hours until bar has hardened, and cut it into squares.
