Description

You will have to do a few more squats because of eating these, but they’re so worth it! Plus, all you need is a skillet to make these bad boys!

Ingredients

  • 1 stick Butter Or Margarine
  • 1 package Chopped Dates
  • 2 cups Rice Krispies
  • ½ cups Finely Chopped Pecans
  • 2 whole Eggs
  • 1 teaspoon Vanilla
  • ¾ cups Sugar
  • ½ cups Coconut

Preparation

Melt butter in skillet. Beat eggs and sugar together, then add to melted butter. Add dates, then cook over medium-low heat for about 15 minutes until consistency reaches color and texture of pecan pie filling. You can divide the mixture in half with a spoon and leave it in the skillet. Turn off the heat and add in vanilla.

In a bowl, combine cereal and coconut. Add in the date mixture and mix together. Form into balls using an ice cream scoop, as mixture will be very hot. Roll balls in finely chopped pecans and place onto wax paper to cool.

ENJOY!

Hmm…I’d say it’s about a 9 inch tall bag?? No clue how many ounces that is so I’ll have to look for something more helpful for you on the bag when I go to the grocery store tomorrow.

Hey Kristy, what size package of dates do you use? My grocery store had two different size packages. Thanks!
