Description

I made Peanut Butter Cookies for my family, and wanted one so bad! Sad for me, I cannot eat nuts! BUT I conjured this up and it satisfied my craving! It is actually healthy, too! This recipe is for 1, but you can always increase the amounts to however many you want to make!

Ingredients

  • 1 Tablespoon Soy Butter (heaping) I Use Soy Wonder Crunchy
  • 1 teaspoon Honey
  • ¼ cups Old Fashioned Oats (uncooked)

Preparation

Melt soy butter and honey in the microwave for 30 seconds to 1 minute. Stir in oats. Form a patty (or cookie).

Place in the fridge for about 5 minutes until set. Remove from the fridge, eat, and enjoy!

I am going to try this cookie today! My son is allergic to nuts, so soy butter is all we use. I really don’t like making a full batch of soy butter cookies, because he is the only one that eats them. Thanks!
