Description

Single serve No-Bake Keto Cheesecake—the best way to get your healthy dessert fix! Gluten-free, grain-free, sugar-free and low carb. No sharing!

Ingredients

  • 1-½ Tablespoon Almond Flour, Packed
  • 4-½ teaspoons Powered Erythritol Sweetener, Or More To Taste, Divided (I Used Swerve, See Note)
  • 1 teaspoon Ghee Or Butter, Melted
  • ¼ cups Cream Cheese, Softened
  • 2 Tablespoons 2% Plain Greek Yogurt
  • ¼ teaspoons Vanilla Extract

Preparation

In a small bowl, stir almond flour and 1/2 teaspoon sweetener. Add ghee and stir until crumbly. Press into the bottom of a small ramekin.

Using an electric hand mixer, beat cream cheese and remaining sweetener (taste as you go to sweeten to taste) in a medium bowl. Add Greek yogurt and vanilla and beat again until combined, stopping to scrape the sides as necessary. Taste again for sweetness.

Spoon over the crust and spread out smoothly. Chill at least 2 hours to firm up the cream cheese. Devour!

Note: I tried this with a granular sweetener and it tastes great but makes the cheesecake a little bit grainy, so I don’t recommend using one! You could use regular powdered sugar too, but doing so will increase calories.
