Description

I make this for friends and family anytime a “pick-me-up” is needed. Serve with whipped cream on top, or your favorite rum sauce.

Ingredients

  • 5 whole Eggs, Large, Beaten
  • 5 cups Whole Milk
  • ¾ cups Sugar
  • 1-½ teaspoon Vanilla Extract
  • 6 slices Potato Bread (or Your Favorite)
  • 1 cup Raisins
  • Cinnamon-sugar, For Sprinkling
  • Whipped Cream, For Serving

Preparation

In a large (3-qt) casserole dish, combine eggs, milk, sugar, and vanilla. Mix until well blended. Add raisins. Cut bread into 2″ cubes and drop into mixture. Sprinkle top with cinnamon sugar. Place entire casserole dish into a pan of hot water. Water should be about 1 inch deep in the pan.

Bake for 1 hour and 30 minutes in a 350-degree oven, or until a toothpick inserted comes out clean. Center should puff up in the center. Serve with whipped cream.

I’ve always been a little grossed-out by the idea of bread pudding, but I made this for my Dad who is a big bread pudding fan. And he’s from New England. Now I’m a little obsessed with bread pudding. This was very good. Simple, not too sweet. I’ll be making it again.
