Description

This is the BEST Strawberry Pie. My grandmother grew strawberries in her garden and they were ripe each year, just in time for my birthday. This is still my birthday treat!

Ingredients

  • 1 cup Sugar
  • 1 cup Water
  • 2 jars (3.5 To 4 Oz. Jar) Apricot Dessert Baby Food
  • 3 Tablespoons Cornstarch
  • 1 pint Strawberries
  • Red Food Coloring
  • 1 whole Baked Pie Shell

Preparation

Combine sugar, water, baby food and cornstarch. Cook over low heat, stirring continually, until thick. Add a few drops of red food coloring (until it is strawberry red).

Cut strawberries into slices and place them in the baked pie shell. Once the mixture is cool, pour it over the strawberries in the baked pie shell.

Refrigerate until set. Serve with whipped cream.

I made this pie yesterday, it was delilcious tasting, but it wouldn’t set up. Thank you Joyful Susan for giving me the tips on how I can adjust the ingredients!

And BTW, I added 1 tbsp. of Grand Marnier to the whipped cream!

For some reason, I had a hard time getting the mixture to thicken so I ended up cooking it on medium heat for around 10 minutes and adding 1 additional tablespoon of cornstarch. That worked perfectly for me.

This glaze is healthier and tastes SO MUCH BETTER than the premade glaze they sell at the grocery. It was such a treat! Thanks again and Happy (Early) Birthday when it comes around!
