A bit of honey, plenty of cinnamon and nutmeg, and lots of oats make these a delicious and hearty oatmeal raisin cookie. It makes a ton of cookies, so plan to share!
Preheat oven to 375 degrees F.
In a large mixing bowl, cream together butter, sugar, and honey until light and fluffy. Add egg and beat until smooth.
In another bowl, sift together dry ingredients (flour through baking soda on the above list). Add the dry ingredients to the creamed mixture and mix well. Add oats and raisins and stir to combine.
Roll dough into small balls and place on parchment paper on a cookie sheet. Bake until lightly browned (the recipe says 15 minutes, but it was only 10 minutes for me).
Makes about 10 dozen two-inch cookies – great for freezing or sharing!
