Description

An easy simple presentation for your special Valentine. This cake is made with a special cream cheese icing that I received from my husband’s grandmother. It is the best!

Ingredients

  • 1 box Red Velvet Cake Mix, 18 Ounce Box
  • 3 whole Eggs
  • ⅓ cups Vegetable Oil
  • 1-¼ cup Water
  • 1 bar Cream Cheese, Softened, 8 Ounce Bar
  • 1 cup Powdered Sugar
  • 8 ounces, weight Cool Whip

Preparation

First mix and bake the cake as per instructions on box (using the additional required ingredients, eggs, oil and water, which I’ve listed above). Use the instructions for 2 round cake pans; my box said to bake at 325F for 35 minutes.

Once cake is finished baking, allow to cool completely.

While cake is cooling, make your cream cheese icing. Mix the cream cheese and powdered sugar until completely incorporated and smooth. Then add in one tub of Cool Whip and mix until completely incorporated and smooth.

To assemble, first stack both cake layers and trim the edges to make a heart shape. I just do this free hand, but you can cut out a circle of wax paper that is the same size as your pan and cut out a heart from there and use as a guide. Save cake pieces that are cut off and crumble them. Frost cake with icing as normal and cover with the leftover cake crumbs.
