Description

Sometimes you need something that’s a little over the top. With a dense brownie base filled with peanut butter chips and Oreos, then topped with cappuccino icing and toasted almonds these brownies are sure to leave you with a sugar and caffeine high to rival any Starbucks drink. Come on, you know you want it!

Ingredients

  • FOR THE BROWNIES:
  • ¾ cups Butter, Melted
  • 1-⅔ cup Sugar
  • 2 whole Eggs
  • 1 Tablespoon Vanilla Extract
  • 2 Tablespoons Water
  • 1-½ cup Flour
  • ¾ cups Cocoa Powder
  • ½ teaspoons Baking Powder
  • ¼ teaspoons Salt
  • 1 cup Crushed Oreo Cookies
  • 1 cup Peanut Butter Chips
  • ¼ cups Semi-Sweet Chocolate Chips

  • FOR THE FROSTING:
  • 1 cup Butter, Softened
  • 1 pound Powdered Sugar
  • ¼ cups Cocoa Powder
  • 1 Tablespoon Instant Coffee Powder
  • 1 Tablespoon Vanilla Extract
  • Milk, If Needed, To Thin The Frosting
  • ½ cups Sliced Almonds

Preparation

For the brownies:
Preheat the oven to 350F. Grease a 9×13 pan.

Combine the melted butter and sugar and mix well. Add in the eggs, vanilla extract, and water. Mix until well combined.

In a small bowl sift together the flour, cocoa powder, baking powder, and salt. Very slowly incorporate the dry mixture into the wet ingredients until just combined.

Fold in the crushed Oreos, peanut butter chips, and chocolate chips. Press into prepared pan and bake at 350 for 20 minutes. Let cool completely before frosting.

For the frosting:
Cream 1 cup softened butter in an electric mixer. Add the powdered sugar, cocoa powder, and coffee powder gradually, until desired consistency is reached. Stir in vanilla extract. If frosting is too thick, add milk in 1 tablespoon increments to thin it out. If it is too thin, add more powdered sugar.

For the toasted almonds… I used about 1/2 a cup of sliced almonds. Now to do this you must have patience and you must pay attention. Add the almonds to a cold, dry skillet. Over very low heat, start to warm them, flipping every minute or so. You don’t want them too brown, and you want to take them off the heat when you start to smell them toasting. Immediately put onto a cold plate to stop the toasting process.

Spread frosting on brownies once they have cooled. Sprinkle brownies with toasted almonds.

Made them and didn’t really taste the coffee flavoring. But then I am a coffee drinker. That might be the difference. They are rich, thick, moist and chewy. Love them….taking them to work tomorrow. They are chock full of calories, I think.

These brownies are the BOMB! Delicious, rich and just the right amount of each flavor. I made them without changing a thing, took most of them to work today and they were gone in about 10 minutes. Everyone that tried them loved them except one person who is not a fan of coffee flavoring. For Nilla, the peanut butter chips are sold here in a bag alongside chocolate chips. Very good if you can get them.

I made this recipe with only two differences and the brownies came out DE-licious!!! 1. I didn’t have any peanut butter chips, so I just subbed in extra chocolate chips instead. 2. I didn’t have enough powdered sugar to make the icing (clearly someone needs to make a trip to Albertsons :) ) so I just made the brownies without it. My batter was really really really thick, so if yours is, don’t worry they come out really beautifully. I will definately be making these brownie again (and next time hopefully with the frosting)…Great recipe!!

Made them exactly as the recipe says, incl. the frosting. They are thick, moist and chewy. I was a little thrown off by the batter, thought for sure they would be thin, but when they came out of the oven I was surprised by how thick and rich they looked. Make these, you won’t be disappointed.

I love the Mud Pie Mojo ice cream and this is the perfect brownie incarnation!! YUMMMMMMM and who doesn’t love a frosted brownie. The only problem I had was with the frosting I had to add a few more tablespoons of butter and milk for it to come together. But once it came together it was heaven. I loved them cold out of the fridge!
