Description

Sweet crunchy crust combined with the bitter rhubarb. Sooo good!

Ingredients

  • 2 cups Flour
  • 1 cup Melted Butter
  • 1-½ cup Oatmeal
  • 2 teaspoons Cinnamon
  • 2 cups Brown Sugar
  • 8 cups Rhubarb, Diced
  • 2 cups White Sugar
  • 2 cups Water
  • 2 Tablespoons Cornstarch
  • 2 teaspoons Vanilla

Preparation

Mix the first five ingredients until crumbly. Press half of the mixture into a 9×13 pan. Cover with the diced rhubarb. Combine the white sugar, water, cornstarch and vanilla until thickened and clear. Pour over the rhubarb. Top with the remaining crumbs and bake at 350 degrees for 1 hour.

Very good! Tried a bit when it came out of the oven! Waiting for this evening to top it with some vanilla bean ice cream!
