So quick and easy, you could be enjoying a piece of warm apple cake in less than an hour.
Preheat oven to 350ºF. Grease and flour an 8″ square baking pan.
Combine apple, egg and sugars. Mix well. Stir in spices, vanilla and oil, along with raisins and nuts, if using.
Sift together flour, salt and baking soda, then add to apple mixture. Stir until dry ingredients are completely moistened.
Spread evenly in pan and bake 40-45 minutes until done.
Best served warm.
