Description

These are a decadent British Columbia treat. This is my Mother’s favorite recipe for Nanaimo bars. There’s many out there but, this is the true original. Very sweet, chocolaty, creamy and delicious!

Ingredients

  • FOR THE CRUMB MIX:
  • ½ cups Butter
  • ¼ cups Sugar
  • 5 Tablespoons Cocoa
  • 1 whole Egg
  • 1 teaspoon Vanilla
  • 1-⅔ cup Graham Wafer Crumbs
  • 1 cup Desiccated Coconut
  • ½ cups Chopped Walnuts
  • _____
  • FOR THE ICING:
  • ¼ cups Butter
  • 2 cups Sifted Icing Sugar
  • 1 whole Egg
  • _____
  • FOR THE CHOCOLATE:
  • 5 whole Squares Of Semi-sweet Chocolate
  • 1 teaspoon Butter

Preparation

Combine first 5 ingredients and cook over medium heat, stirring constantly until smooth and slightly thickened. Remove from heat and stir in graham wafer crumbs, coconut and walnuts. Mix well and press into 9 inch square pan.

Cream 1/2 cup butter and gradually beat in icing sugar and egg. Spread over crumb mixture in pan and chill about 20 minutes or so.

Melt chocolate and 1 tablespoon butter together over hot water and spread on top of icing. Chill until the chocolate is set. Store in refrigerator. Makes 2-3 dozen depending on how big you cut the squares.
