A little late for Christmas, but these are wonderful any time of year.
In a large bowl, cream together the shortening, sugar, vanilla and eggs with an electric mixer. Add dry ingredients and mix well. On a floured surface, roll the dough out to about 3/8 inch and use cookie cutters to cut out shapes. We like them nice and thick but if you prefer them thinner, go for it.
Place on a baking sheet and bake in a 350ºF oven for 8 minutes (unless the cookies are cut thinner, then give them less time). Once they’re cooled, smother with your favorite frosting (we like buttercream) and add festive sprinkles.
