Description

Sweet fruit topped with warm, fluffy, homemade dumplings. Don’t forget the cream!

Ingredients

  • 4 cups Berries, Hulled And Quartered (or Any Fruit Of Your Choice)
  • ⅓ cups Sugar
  • 2 cups All-purpose Baking Mix (Store-Bought Or Use Included Homemade Recipe)
  • ⅔ cups Milk
  • FOR THE HOMEMADE BAKING MIX:
  • 2 cups All-purpose Flour
  • 1 Tablespoon Baking Powder
  • 1 teaspoon Salt
  • ⅓ cups Vegetable Shortening Or Butter

Preparation

Stir together the strawberries (or fruit of choice) and sugar in a skillet. Let sit for about 10 minutes until juice forms. Bring to a simmer over medium heat and cook uncovered for about 10 minutes, just until the berries begin to soften but aren’t mushy.

While the berries are simmering, mix together 2 cups of the all-purpose baking mix and milk until a soft dough forms. You can use a store-bought mix, or follow the instructions at the end of this recipe for homemade baking mix.

Using a small spoon, drop dough evenly over the berry mixture. Cover the pan, reduce heat to low and cook for another 8-10 minutes. Until the dumplings have doubled in size and look dry on top.

Remove from heat and let stand for about 5 minutes. Serve warm, drizzled in cream.

For the homemade baking mix: Sift flour, baking powder and salt in a large bowl. Cut shortening/butter in with a fork until mixture resembles fine crumbs. Store mixture in an airtight container in the fridge for up to 4 months. When ready to use, just mix together the appropriate amount of milk and baking mix to make up your batter.

Super yummy! I used frozen berries & some cut-up frozen peaches – let them defrost in the skillet – then added the sugar & a bit of cornstarch & water. I had to let the dumplings cook for almost 25 minutes, but perhaps I made them too runny to begin with…

Anyway – this was super easy – and my family LOVED it! Thanks!!
