Description

A decadent, silky pie with a no-bake crust and a beautiful mocha flavor. If you can handle raw eggs, this is one of the great desserts, folks. You’ll love it!

Ingredients

  • Crust
  • 1 cup Pecans, Finely Chopped
  • ½ cups Packed Brown Sugar
  • 2 ounces, weight Semi Sweet Chocolate Grated
  • 2 Tablespoons Kahlua
  • Dash Of Salt
  • Filling
  • 2 sticks Butter (salted)
  • 1-½ cup Sugar
  • 2 teaspoons Instant Coffee Granules
  • 1 teaspoon Kahlua
  • 3 ounces, weight Semi-sweet (or Bittersweet) Chocolate
  • 1 teaspoon Vanilla Extract
  • 4 whole Large Eggs

Preparation

To make the crust, combine chopped pecans, brown sugar, grated chocolate, and salt. Stir with a fork to combine, then drizzle in Kahlua, stirring until combined. Press mixture into a pie pan, bringing it up the sides a bit. *Do not bake* Set aside or refrigerate until needed.

In small microwave safe bowl, melt 3 ounces of unsweetened baking chocolate until stirrable (about 45 seconds on high). Set aside to cool.

In a large bowl of an electric mixer fitted with the whisk attachment, beat butter, sugar, 2 teaspoons instant coffee, and 1 teaspoon Kahlua until fluffy, about 1 1/2 minutes. When melted chocolate is cooled, drizzle it into the butter/sugar mixture as it beats on medium speed; use a rubber spatula to get it all out. Add 1 teaspoon of vanilla extract. Beat the mixture thoroughly until combined, scraping the sides if necessary.

On medium speed, add the four eggs, one at a time, over a period of 20 minutes; leave about 5 minutes between each egg addition. Scrape sides of bowl halfway through this process. Pour filling into the pie crust. You might have a little filling leftover. If you do, I’ll trust you to do the right thing.

Smooth out the pie filling and place pie in the refrigerator to chill for at least two hours (preferably longer).

Serve with whipped cream and more grated chocolate.

This pie actually keeps well for a long time! I made it for a girl’s night and 5 days later it was still just as ridiculously good. I did change the crust a little – a baked graham cracker crust with pecans, brown sugar & butter. And it too was just as good as the first nite, not soggy at all.

Surprised it wasn’t polished off??? We had 3 other desserts between 5 of us to contend with that evening…

This is an excellent make-ahead recipe.

This is delicious! When making the crust the second time around I didn’t have enough semi-sweet chocolate, so I added 1 Tb cocoa powder and also added 1 Tb. coconut oil. The coconut oil makes it even tastier!

I made this pie for company and it was delicious. One thing I changed: I didn’t have instant coffee granules, so I just threw in a bit of strong coffee. I didn’t get the grittiness that other folks identified from the granules. It would be VERY easy to omit the granules (or dissolve them in a bit of hot water first) and just throw in a bit of coffee if y’all didn’t like that part of the texture.

The crucial thing for me was the wait time in whipping the eggs – it cannot be fudged. It took away most of the grittiness from the sugar and transformed what should have been crunchy, buttery goo into a silky filling. I plan to make this again with any number of flavor variations. Thank you PW!

This was a very good pie! The time spent mixing and whipping is well worth it. Couldn’t get over the “grittiness” of it though.

This pie tasted amazing! Especially the crust…YUMMMM! Because it is not cooked, the sugar in the pie never dissolves and results in a slightly grainy texture. The flavor was worth putting up with the grainy-ness : )

I made this pie for a potluck at the company where I was interning over the winter, and hoo boy did they ever love me! Seriously, I had people thanking me for completely destroying their diets, and I had people beg for the recipe! Hopefully I turned a few more people on to Pioneer Woman, because with food this good, how could I ever justify keeping it to myself?

This comes together quickly, the most tedious part is grating the chocolate, and even that isn’t too bad. The instant coffee I used stayed in noticeable pieces…so maybe I ought to grind it down with a mortar and pestle next time I make this. Either way, I will absolutely make this again!
