Description

This is a moist, fudgy mocha cake that makes its own thick sauce as it bakes! Perfectly moist cake on top, fudgy warm mocha sauce on the bottom … add a scoop of ice cream and you’ve got heaven! (No frosting needed!)

Ingredients

  • ¼ cups Butter, Melted
  • 2 teaspoons Vanilla
  • ½ cups Half-and-half
  • 1 cup Sifted Cake Flour
  • 2 teaspoons Baking Powder
  • 1 cup Sugar, Divided
  • Pinch Of Salt
  • ½ cups Dutch Processed Cocoa Powder, Divided
  • 1 cup Chocolate Chips
  • ¾ cups Packed Brown Sugar
  • 1-¾ cup Strong Hot Coffee

Preparation

Preheat your oven to 400°F. Butter and flour a 9″ square cake pan.

In a small bowl, stir together the melted butter, vanilla and half-and-half; set aside.

In a large bowl, whisk together the cake flour, baking powder, 3/4 cup sugar, salt and 1/4 cup cocoa. Stir in the chocolate chips, and pour the batter into your prepared baking pan.

In another small bowl, stir together the brown sugar, remaining 1/4 cup sugar, and remaining 1/4 cup cocoa. Sprinkle over the cake batter.

Pour the hot coffee over the batter/sugar and bake for 20-25 minutes, until the top of the cake is set (toothpick inserted just into the top 1/2 inch of the cake comes out clean) and the bottom is bubbling.

Serve warm with a scoop of ice cream! (Although it does taste almost as good the next day!)

Oh Heavens! This was death by chocolate! Everyone loved it. I had to be sure there was plenty of vanilla ice cream around. This is definitely on the top of my chocolate cake pile.

I ended up adding a bit of butter flavoring and using half dark cocoa and half regular (that’s what I had on hand) and chocolate flavored coffee.

This was fantastic!! I made it in a casserole dish & it took longer to bake, but it looked pretty on my table. Thanks for the substitution idea. I may try it that way next time. I would definately make this again for a gathering.

Pam – you can substitute boiling water for the coffee… it will take away some of the richness, but I understand not wanting to buy a special ingredient for one recipe!!

Any suggestions on what I could use in place of the coffee. I don’t drink coffee and don’t buy it or use in recipes but would like to make this but without the coffee! Thanks for any suggestions!
