Description

A simple version of everyone’s favorite sandwich cookie.

Ingredients

  • 2 sticks Butter, Softened
  • ½ cups Granulated Sugar
  • 1-¾ cup Flour
  • ¼ teaspoons Salt
  • 2 teaspoons Vanilla Extract
  • 1 cup Semisweet Chocolate Chips
  • ¼ teaspoons Peppermint Extract

Preparation

Preheat oven to 350ºF.

Cream together the softened butter and sugar either using a mixer or a wooden spoon. Add the flour, salt and vanilla and mix until a soft dough comes together.

Wrap dough in plastic wrap and chill for thirty minutes.

After chilling, roll dough into a log and gently slice 1/2-inch cookies. Place cookies on a lined cookie tray and bake for 20 minutes, or until the edges start to brown.

Remove from oven and let cool completely.

Melt chocolate in a glass dish in the microwave in 30-second intervals, stirring well after each. When chocolate is smooth, add mint extract and mix well.

Slather melted chocolate on one cookie and then sandwich another cookie on top. Repeat until all cookies are sandwiched together. Let cool for a few minutes until chocolate hardens. Store in a sealed Tupperware container.

I’ve been known to ruin even simple cookie recipes so I was worried about these turning out crumbly like kender3’s. I reduced the flour just a tad and they were perfect! I will be making these much thinner next time. They didn’t spread out much at all for me, so I think 1/4″ will be better. Very delicious!

These were very, very crumbly (I tried cooling the dough in the freezer for a bit, but it didn’t help). I managed to salvage some of the batch, but a lot of the cookies turned to crumbs. The ones I did salvage were fine, but not special enough to try again to see what went wrong.

The PERFECT solution to a milano-cookie craving! The cookie is deliciously crispy. I put mine in the freezer for a bit also, just to make slicing easier.
