Description

I LOVE cheesecake. Is there anyone who doesn’t? However, if I make a whole cheesecake, I will eat the whole thing! So here is a way to make individual portions.

Ingredients

  • 12 whole Nilla Wafer Cookies
  • 2 containers (8 Oz. Container) Cream Cheese, Softened
  • ½ cups Sugar
  • 2 whole Eggs
  • 1 teaspoon Vanilla
  • ¼ cups Key Lime Juice

Preparation

Preheat oven to 325F.

Line a muffin tin with foil liners that have been lightly sprayed. Place a Nilla wafer cookie in each liner.

In a mixing bowl, beat cream cheese and sugar together. Add in eggs, vanilla and lime juice. Mix again until smooth.

Using a cookie scoop, drop a scoopful onto each cookie. Bake for 25 minutes. Remove from the hot pan to cool.

Keep chilled. I also top each with a dollop of Cool Whip and a slice of lime.

Fabulous. I’ve been craving something cheesecakey and these were the easiest things to make. I used regular lime juice and the flavor was perfect. The Nilla base gets soggy and the entire cupcake ends up with the same texture so I might add some chopped pistachios for a crunch factor next time.
