Description

A cookie cake scaled down to serve just two—crispy edges and a soft chewy center are the closest thing to heaven.

Ingredients

  • 4 Tablespoons Unsalted Butter, Softened
  • 2 Tablespoons Shortening
  • ¼ cups Light Brown Sugar
  • 3 Tablespoons Granulated White Sugar
  • 1 whole Large Egg Yolk (no White)
  • ¾ teaspoons Vanilla Extract
  • ½ cups Plus 2 Tablespoons Flour
  • ⅛ teaspoons Fine Salt
  • ⅛ teaspoons Instant Espresso Powder (optional)
  • ¼ teaspoons Baking Soda
  • ¼ teaspoons Baking Powder
  • ⅓ cups Semisweet Chocolate Chips

Preparation

Preheat the oven to 375°F and lightly grease a 6″ pie plate.

In a medium bowl, cream the butter, shortening, brown sugar and granulated sugar together. Beat very well, about 45 seconds. Add the egg yolk and vanilla and beat until combined.

In a small bowl, whisk together remaining ingredients (except chocolate chips) and add it in 2 batches to the creamed butter, beating just to combine. Stir in the chocolate chips.

Press the dough into the pie plate and press it evenly flat. Bake for 30-33 minutes, until the middle is slightly underdone (it will set up as it cools).

My husband and I love chocolate chip cookies! I am a devotee of the World’s Best Chocolate Chip Cookie recipe, but if I made them all the time, we’d eat them all the time, and bad things would happen. So I decided to make this as a special dessert treat one night (that would only last one night!). I’ve definitely enjoyed other DessertForTwo recipes. Unfortunately for us, this cookie didn’t turn out as perfect as we had hoped. The texture was sandy and crumbly and we prefer dense, chewy cookies. It definitely tasted like a chocolate chip cookie and was easy to whip up in a short period of time. In the future, I think I’ll stick with keeping the World’s Best Chocolate Chip Cookies in the freezer and baking a couple for us from time to time. (if we can refrain from eating the dough patties raw…) Thank you for taking the time to share your recipes!

This is a restaurant worthy treat! I’ve made it too many time since it was posted. everything good gooey and chewy about a chocolate chip cookie :) Its almost too good to share :)
